Today I am thankful for:

- The SANE Bread recipe - I made this for the first time yesterday and they helped me greatly today; the only thing I wanted to eat was cheese and vegemite on toast. SANE bread made that possible!

@LynnetteStork I'm really lucky to have a bulk foods store near my work that sells loads of things. I had a quick search on Amazon.ca and there are some options there, I wouldn't call them cheap though (gelatin has its own benefits however - it's great for my achilles! I try to get some collagen/gelatin in every day)

It's been a few days, I have a fair bit of gratitude to express
On Sunday I was grateful for:- My left leg being stronger than it was before
- Quality time with my family
- A delicious SANE dinner that resulted in enough veggie prep for a few meals! Yay to having prepped veggies on hand
On Monday I was grateful for:- Being over the best part of this cold
- Free range lamb
- Naps
- Hazelnuts
- Brussels Sprouts
- Kristin Chirico at Buzzfeed

@RainaSingh Looks nummy. Meatballs are so convenient once you get them all made. Did you run your carrots through a spirulizer? I have one, but never tried it on carrots.

@LynnetteStork Yes! I ran the carrots and the zukes through the spiraliser - I also pickled some cucumber and ran that through the spiraliser and currently have that in a pickle brine.
These meatballs were great - pork mince, fennel seeds, garlic, salt and pepper and some chilli flakes. Heston Blumenthal had an episode of one of his (less crazy) TV shows that if you leave the meat + salt in the fridge for at least an hour that it can essential bind to itself without the need for eggs, breadcrumbs, or other seasonings. Which is great because they're much less messy to roll out -
@RainaSingh That's a similar to the recipe that I use to make breakfast sausage, sub out the fennel for thyme and you have a farmer's breakfast sausage. I like that tip about putting the meat in the fridge w/the salt. I'll have to give it a try. Hubby loves meatballs in his spaghetti sauce. I personally don't see the need to drown them in sauce, but hey, each to his own, lol.

@LynnetteStork I think for me personally if a meat is going to be drowned in sauce, I'd rather it be like a meat sauce - I know I've run into a few splatter problems (always when wearing lighter clothes, before going to a meeting, because of course) when dealing with trying to 'cut' meatballs in sauce, haha. But yes, to each their own!

Today I am grateful for:
- You know that feeling when you hear a song after a long time and you forgot how much you loved it and then it feels new all over again? I'm grateful for that
Dami Im's Super Love played in the gym and there has been a lot of car karaoke (car-aoke?) to it since
- Working with people who not only encourage the feedback you give, but additionally, appreciate and are thankful of the feedback
- My physio appointment earlier today
- You know that feeling when you hear a song after a long time and you forgot how much you loved it and then it feels new all over again? I'm grateful for that

- Being able to hang my washing out on the line under the light of the moon, in the peace of the (very) early morning
- Youtube
- My leg, for getting through a full 45 minute RPM class without any modifications. Leg, you're getting stronger!

Today I am grateful for:
- Pre blending my green smoothie base
- The protein pannacotta that I have been working on, the testing process has been delicious!
- My leg being able to do 42 single leg calf raises on the leg press this morning. On Monday I was only able to do 8. Leg, you're doing a fabulous job!

@LynnetteStork When you get a good one, it's really good! The last batch I made had too much gelatine in it so it was more set than I wanted, but I was super happy with the flavour.
Today I am grateful for:- The extra hour of sleep I got this morning
- The member at the gym last night who spoke to me, saying he liked my classes and was looking forward to me being ready to teach again
- Pork crackle

On Saturday I was grateful for:
- The beautiful evening I spent with my friend the night prior - I was a bit anxious about how this night was going to go down as the plans changed at the last second, however it turns out to be a lovely, and mostly SANE, night!
- My surgeon for advising me to take aspirin while I was in the cast and moon boot after I got injured. A school friend who recently experienced the same injury was told that aspirin wasn't necessary is now in hospital with a blood clot in her lungs
- My dinner:
- Johanna Basford's Enchanted Forest Colouring book
- The steady fall of rain that lulled me into a state of calm and relaxation throughout the day
- The deep and glorious sleep I had
- Hot coffee
- The Reply All Podcast and the current series on Paul Modrowski
- All of the wonderful new members of the SANE Family

Welp, been a little bit of time since I've updated this journal! Excited to share my gratitudes for the last few days:
Last Wednesday I was grateful for:- The awesome catch up with @Rebecca_SANECoach and @Wednesday_SANECoach I had in the morning
- My gym for always providing hot water for showers
- Clean clothes
- Hot Soup
- This recipe for Saag - I did it on the stovetop rather than the slow cooker, and I ignored the recommendations for greens and included a full bag of baby spinach, kale, and silverbeet. An AWESOME way to get green leafy veggies in during winter!
- My new jacket (I got it in the blue)
- Insurance
- Taxis
- An understanding boss
- Vacuum cleaners and Steam Mops
- Hazelnut Flour
- A wonderful dinner with friends
- My brother for letting me use his car
- Coffee
- RPM
- My boss who treated me to breakfast
- Vanilla Chai
- The fact that my existence coincides with the existence of so many spaces that are compassionate, accepting and loving.
